Because we can see the difference between someone else gambling and us gambling. Even if we were to assume that these influencers plays out of pocket and their own money, just because they win or lose doesn't mean we are going to win or lose neither, we could definitely have different results.

Yes, and we should never forget that. Different results for different players because the algorithms of the games are broad. The RNG is also there so there's no telling what could come out anytime. The gambling influencers should just be seen as a demo mode. We should not try what they are doing because there's a chance they are not using their own money or they are with the gambling platform's marketing team.
