 there's no crab to buy around here, but I ordered cod that arrived this week.
 I prepared it from the day before yesterday to yesterday.
 I left 24 hours for the salt to come out in the ice water, today,
 I cooked potatoes, I put the cut ones in the glass pan,
 I put the pieces of cod on top,
 I made a crushed garlic sauce with marjoram, red onion and parsley,
 I poured it on top, and covered black olives with aluminum foil to bake
 and get the spices well,

I have not made Baccala in 4-5 years.

I use large pot with ice cubes and run cold water on the pot for over nite.

trick is very slow running water or a fast drip.  and change the ice cubes as they will melt.

I then take the unsalted or desalted cod out of the pot and use a simple tomato base sauce with Sicilian olives added to it.
Cook slowly and use over pasta.

You break the cod up into small pieces.

... this time I didn't want to use any tomatoes, I preferred to use a lot of marjoram that I have planted here at home, and the parsley is from here too, onion, garlic was added, also I make a very good seasoning of lemon peel and rosemary beaten with whole salt in the blender, which I also didn't want to use.
 I wanted to make something cleaner and lighter, I don't use to follow ready-made recipes, so, the cod was the one from Porto, I just filled the bucket with ice, and put the pieces inside after having washed the excess salt well, and I didn't have time to change the ice, but I should, when I removed the pieces from the water the next day, I put it in the sieve to drain the water, after hour,  I took it to the pan, I added two glasses of water, boiled it, cooking it a little, and set the separate ones aside, and reserving the water for the sauce, then, knowing that it would be a little saltier, I didn't use salt in the sauce. The sauce I made as follows: I beat the marjoram in the blender, while the crushed garlic boiled in the water that was left of the boil that I gave in the pieces, taking advantage of the fat and not dispensing flavor, after having refined the garlic with the water, I added the marjoram water with parsley beaten in the blender and half a tablespoon of cornstarch previously dissolved in the water, and extra virgin olive oil of quality at will, after refining a little more over low heat, was poured on top of the potatoes in pieces already cooked, and the pieces of cod in the form of glass...I put the black olive oil, and more extra virgin olive oil, covered it with aluminum, and it was another hour in the oven over low heat, the secret, low heat, and patience,... It was very good, we ate it with rice and beans and there was a little left over for later,.... I can't with peppers, although I like it a lot, my kidneys are not good, and also in this case, I have to think about the others, however, we have pepper cured in glass jars that could be added separately, but no one used it, it was the pure flavor of the cod...... then I rested a little and went for a bike ride, although it was still raining... but, when i was ride ,the sun showed and the weather cleared, than i arrive, the weather closed again.....

-I really liked to take long exposure photos with a manual film camera, after digital cameras came, I got a little discouraged, because the ones that have the feature to keep the shutter open indefinitely, are very expensive and the cheapest, have a limited time to keep the camera shutter open... This photo is about 20 years old, it was taken looking southwest, lasting about 3~4 hours or more,and also is pic of pic.., you need to have a black cloth to cover when clouds come and without shaking the tripod, and when you close the shutter, you also need a black cloth before,... this one was a little whitish, because I gave it a, and some cloud must have passed, this is the bad part of smoking weed and drinking wine alone in the middle of the woods, when you are doing something that needs constant attention...
...I have no way to scan it, and it was easy on my faceb... but just to say that I liked this type of long exposure photography...
